Thank you, Erica!


Homemade tomato soup from a recipe inside of my head and mini-grilled cheeses on seeded baguette. Yum.

And a special "Thank You!" to Erica for giving me the soup and sandwich plates for Christmas last year. (Or was it my birthday? I forget.)

You are welcome! It looks wonderful. And the recipe is inside your head??? I wish that soup was inside my mouth. :)

And yes, I think it was Christmas.

The problem of making something good without a recipe is that it is never the same the next time :o(

I think it was:

- One onion diced
- Two smallish carrots diced
- Two ribs of celery diced
All sautéed in oil with some salt and pepper.

- Two 14oz cans fire roasted crushed tomatoes
- One 14oz can of crushed tomatoes
- About a cup of chicken broth
- Add some basil and/or oregano
- Pinch of red pepper flakes

Simmer. Blender. Add enough cream to make it a pretty color. Heat on low until cream is warm. Stir in pat of butter off heat. Serve.
